Curried Cauliflower Soup |
Tips: This simple yet delicious soup is perfect for
lunch or as a light meal, served with
warm, crusty bread and garnished with
fresh coriander. |

INGREDIENTS: |
3 cups |
full-fat (whole) milk |
|
1 |
large cauliflower |
|
1 tbsp |
garam masala |
|
OPTIONAL |
fresh coriander (cilantro) leaves, to garnish |
|
|
salt and ground black pepper, to taste |
|

DIRECTIONS: |
- 1) Pour the milk into a large pan and place over a medium heat. Break or cut the cauliflower into florets and add to the milk with the garam masala and season with salt and pepper.
- 2)Bring the milk to a boil, then reduce the heat, partially cover the pan with a lid and simmer for about 20 minutes, or until the cauliflower is tender.
- 3) Let the mixture cool for a few minutes, then transfer to a food processor and process until smooth (you may have to do this in two separate batches).
- 4) Return the puree to the pan and heat through gently without boiling, checking and adjusting the seasoning to taste. Serve immediately, garnished with fresh coriander, if you like.
