INGREDIENTS: |
6 - 1 oz slices |
Refrigerate goat cheese for aproximately one hour |

3/4 cup |
Pankco Bread Crumbs |
|
1 Teaspoon |
chopped fresh parsley |
|
3 cups |
Mixed Greens |
substitution: any salad greens or baby spinach |
1 cup |
Canned Mandarin Orange Segments ( drain juice) |

1/2 cup |
toasted pine nuts |
|
1/2 C |
safflower oil |

DIRECTIONS: |
- Place Pankco bread crumbs and parsley on baking tray and drizzle with olive oil and broil until toasted brown - remove and cool
- Cut goat cheese in 2 inch slices ( larger if you prefer)
- Place goat cheese in bread crumbs and sautee in oil until lightly brown - drain on paper towel
- Add mixed Greens, mandarin oranges, roasted pine nuts to plate - Add meat or seafood desired ( Grilled Shrimp- rotesserie chicken- leftover steak
- Top with Goat cheese and add dressing
- Dressing: in Blender add Champagne vinegar, apple cider vinegar, 1 egg yolk, pinch of sugar and start food processor or blender on low adding olive oil until emulsified
