Potato Layer Bake |
Tips: Potatoes make a very good basis for a
vegetable accompaniment. They are a
good source of complex carbohydrate
and contain a number of vitamins.
From the point of view of flavor, they
combine well with a vast range of other
ingredients. |

potatoes |

leek, sliced |
|
3 |
garlic cloves, crushed |
|
1 3/4 oz |
Cheddar cheese, grated |
|
1 3/4 oz |
mozzarella cheese, grated |
|
1 oz |
Parmesan cheese, freshly grated |
|
2 tbsp |
chopped fresh flat leaf parsley, plus a few extra sprigs to garnish |

salt and pepper |

2/3 cup |
light cream |
|
2/3 cup |
milk |
|

DIRECTIONS: |
- Preheat the oven to 325`F. Cook the potatoes in a pan of boiling salted water for 10 minutes. Drain well.
- Cut the potatoes into thin slices. Arrange a layer of potatoes in the bottom of an ovenproof dish. Layer with a little of the sliced leek, crushed garlic, cheese, and chopped parsley. Season to taste with salt and pepper.
- Repeat the layers until all the ingredients have been used, finishing with a layer of cheese.
- Mix the cream and milk together, season to taste with salt and pepper, and pour over the potato layers.
- Cook the bake in the preheated oven for 1 - 1 1/4 hours, or until the cheese topping is golden brown and bubbling and the potatoes are cooked through and tender.
- Garnish the bake with chopped parsley and serve immediately.
