Quiche Lorraine

Tips: For a variation, you may add 1/2 sliced sauteed green onions or leeks. Good served with a green salad and red wine or beer.

INGREDIENTS:
1 1/4 cups all-purpose flour
1/3 cup butter
2 tbsp ice water
FOR THE FILLING
3 eggs
1 1/4 cups whipping cream
1 tsp mixed herbs
dash black pepper
dash salt
1 cup diced smoked ham
1 1/2 cups grated Cheddar or Jarlsberg cheese
dash paprika
DIRECTIONS:
  1. Measure flour into a bowl. Cut in butter with a pastry blender until coarse crumbs form. Add ice water, mixing with a fork until dough forms a ball. Wrap. Chill for 1 hour.

  2. Roll dough out to fit bottom and sides of a 9in quiche pan. Prick dough with a fork. Bake pie shell at 425`F for about 10 minutes.

  3. For filling, beat eggs and cream. Add spices, ham and cheese. Pour mixture into prebaked pie shell. Sprinkle with paprika. Bake at 400`F for about 25 minutes or until set.
