INGREDIENTS: |

olive oil, divided |

strip steaks, 1in thick, about 1 1/2 lbs total |

3/4 tsp |
kosher salt, divided |
|
1/2 tsp |
black pepper, divided |
|
2 pints |
grape tomatoes |
|
1/4 cup |
fresh oregano leaves |

DIRECTIONS: |
- Heat 2 tsp olive oil in a large skillet over medium-high heat. Season steak with 1/2 tsp kosher salt and 1/4 tsp black pepper and cook to desired doneness, 4-6 minutes per side for medium-rare.
- Let rest at least 5 minutes before slicing. Wipe out the skillet and heat 1 tsp olive oil over medium-high heat.
- Add grape tomatoes and 1/4 tsp each kosher salt and black pepper. Cook, tossing occasionally, until beginning to soften, 4-6 minutes.
- Mix in fresh oregano leaves and serve with the steaks.
