8in flour tortillas |

DIRECTIONS: |
- Heat grill to medium. Brush portobello mushrooms with 1 tbsp olive oil and season with kosher salt and black pepper. Grill, covered, until tender, 8-10 minutes minutes per side; thinly slice.
- Lightly brush 1 side of each tortilla with 1 tbsp olive oil. Form 4 sandwiches with the tortillas (oiled sides facing out), mushrooms, and pepper jack.
- Grill, covered, until the cheese is melted and the tortillas are crisp, 1-3 minutes per side.
