Marinated Zucchini and Onion Salad

INGREDIENTS:
4 medium zucchini or yellow squash
1 1/2 tsp kosher salt, divided
1/4 small red onion, thinly sliced
2 tbsp olive oil
2 tbsp white wine vinegar
1/4 tsp black pepper
DIRECTIONS:
  1. In a colander, toss zucchini or yellow squash with 1 tsp kosher salt. Let sit until softened, about 30 minutes; rinse and pat dry.

  2. In a medium bowl, toss with red onion, olive oil, white wine vinegar, 1/2 tsp kosher salt, and black pepper.

  3. Let sit at least 15 minutes and up to 8 hours before serving.
