Mexican Grilled Corn with Cilantro

INGREDIENTS:
2 ears of corn
1 tbsp olive oil
1/4 tsp kosher salt
1/4 tsp black pepper
1/4 cup fresh cilantro, chopped
1 tsp fresh lime juice
lime wedges, to serve
DIRECTIONS:
  1. Heat grill to medium. Shuck ears of corn and cut each into 6 pieces.

  2. In a medium bowl, toss with olive oil and kosher salt and black pepper. Grill, uncovered, turning occasionally, until tender, 10-12 minutes (reserve the bowl).

  3. Transfer the cooked corn to the reserved bowl and toss with cilantro and lime juice. Serve with lime wedges.
