Crab and Tofu Stir-fry

Tips: A light meal... this stir-fry is fast & easy..

INGREDIENTS:
7 oz silken tofu substitution: watch dates on tofu
2 garlic cloves, finely chopped
4 oz canned crab meat
3 3/4 oz baby corn cut in half
2 scallions chopped
1 fresh red chilli or jalapeno pepper seeded and chopped
1 lime (juice of lime)
1 tbl coriander spice
DIRECTIONS:
  1. Drain the silken tofu. Using a sharp knife, cut the tofu into 1/2 inch cubes.

  2. Heat the oil in a wok or heavy frying pan. Add the tofu cubes and stir-fry until golden. Remove the tofu and set aside in bowl.

  3. Add garlic to wok or pan and stir-fry for about 1 minute until golden brown. Add crab meat, tofu, corn, scallions, chilli, soy sauce, fish sauce and sugar. Cook, stirring vegetables until tender.

  4. Add lime juice, coriander and serve with lime wedges. Optional: Japanese egg noodles or rice.
