Winter Chicken Casserole

Tips: This is a very simple and economical dish to prepare and cook.
Yield:4

INGREDIENTS:
1 4 lb.chicken cut in pieces
3 shallots, finely chopped
2 sliced carrots
2 celery sticks, chopped
2 garlic cloves, chopped
1 juice of lemon
1 1/4 cups hot water
2 tbsp chopped flat leaf parsley
DIRECTIONS:
  1. Preheat the oven to 350`F. Heat the olive oil in casserole and brown the chicken pieces on both sides. Take chicken out of casserole and set aside.

  2. Add to casserole- shallots, carrots, celery and saute them until soft.

  3. Add garlic and cook until soft, return the chicken to the pan and pour the lemon juice over the mixture. Simmer for 2-4 minutes, add water and season with salt and pepper.

  4. Cover the casserole and bake for 1 hour, turning the chicken pieces over occasionally.

  5. Remove the casserole from the oven .

  6. cook egg noodles per package instructions - drain and plate

  7. Add chicken to noodles and garnish with flat leaf parsley
