Low -Fat Ricotta Cream Cheese Pie

Tips: This creamy mock cheesecake is delicious in a baked dish with hot fruit compote or in a graham cracker crust served with fresh berries.

INGREDIENTS:
1 can of evaporated milk
4 eggs
1/4 C. lowfat milk
1 1/2 TBL corn starch
1 1/2 teasp. pure vanilla extract
1 1/2 C. splenda
1 C. golden raisins substitution: dried cranberries or any other dried fruit
1 8 oz. low fat cream cheese
DIRECTIONS:
  1. Blend eggs and evaporated milk in food processor until smooth, In small bowl add corn starch and low fat milk and stir - add to food processor and

  2. take remaining ingredients one at a time into food processor and blend until creamy consistancy. Spray the pan with Pam Baking spray and pour in mixture

  3. Add raisins and bake. Cool and slice for a snack or brunch with warm fruit or cool berries.

  4. Bake 375 degrees for 45 minutes

  5. Top with cooked berries and add your favorite sugar substitute...
