Tex-Mex Rotisserie Chicken Pasta

INGREDIENTS:
1 - 16 0z. whole wheat pasta ( angel hair, ziti, or any other favorite)
2 C rotisserie chicken - chopped (remove skin)
1 med onion - chopped
2 tbl olive oil
1 16 oz. fresh salsa ( in refrigeration section of grocery store) substitution: fresh homemade is always a first choice
2 avocados, peeled & chopped
1 16 oz. alfredo sauce ( homemade lowfat version included in this recipe) substitution: ( homemade lowfat version included in this recipe)
3/4 C parmesan cheese - grated pecorino, romano, or add your favorite choice
DIRECTIONS:
  1. Cook pasta according to package directions and put aside.

  2. Heat olive oil in skillet over medium heat. Add onions and cook until soft. Add chopped chicken and salsa and bring to simmer. Add alfredo sauce and simmer

  3. for 5 minutes.

  4. Add cooked pasta, don't rinse pasta. Toss pasta with sauce mixture and serve. Top with grated parmesan cheese and avocado slices

  5. Lowfat alfredo sauce: 2 Cups of lowfat milk, add a blend of lowfat cheeses (goat, gruyere ,swiss, provolone, and simmer) add 1 teasp of corn starch and cook until
