Turkey Bacon Veggie & Cheese Quiche

Tips: Great for those leftovers in your refrigerator that you don't know what to make. Try adding turkey sausage instead of turkey bacon. Yummy!!
Comments: This is a mock quiche. Made without a crust. The bisquick bakes a crust in this quiche. Add any of your favorite ingredients to this one dish casserole and your friends and family will just love this recipe! Great for main meals or Sunday brunches.

INGREDIENTS:
1 large bag of frozen chopped spinach
1 large onion chopped (approx. 1 cup) optional
2 medium tomatoes sliced
1 16 oz. of low-fat shredded mexican cheese (sargento brand is a good quality)
2 cups low-fat milk substitution: may add other cheeses desired
1 small lot goat cheese
8 large eggs
3 cups bisquick
salt & pepper to taste (approx 1 teasp each)
2 tbl pure vegetable oil
Optional: fresh basil leaves to add to the top of quiche
1 teasp. dried italian seasoning
DIRECTIONS:
  1. Heat oven to 375 degrees. Add cooking spray to deep rectangle casserole dish. Chop onions, slice tomatoes and defrost frozen spinach - drain water from spinach and set aside.

  2. In blender or food processor, add milk, bisquick, eggs, oil, salt & pepper and pulse to start, then blend until mixture is smooth. The consistancy is thicker, like pancake mix.

  3. In casserole dish, add onions, spinach, cheese, and then pour baking mixture over the spinach. Top with goat cheese, basil and tomatoes to casserole dish Top with basil and bake

  4. 45 minutes on 375 degress or until toothpick inserted in center comes out clean. Cool 5-10 minutes and serve.
