Turkey Chili |
Tips: Cool Chili and freeze quart size (Ziploc) freezer bags. You will be able to pull out meals from the freezer and warm on stove or put in bowl and microwave. If you have a variety of dishes in freezer, you will be less likely to grab unhealthy choices. Enjoy! |

INGREDIENTS: |
3/4 cup |
chili powder |
4 |
fresh tomatoes, diced |
3 lbs |
ground turkey meat (lean) |
4 tbsp |
olive oil |
2 |
large chopped yellow onion (remember the food processor is less crying - pulse until onions are smaller) |
Jalapeno, chopped (add more if you like spicy), fresh or canned. |
2 cups |
carrots, chopped or diced |
1 |
bunch of parsley, chopped |
DIRECTIONS: |
- In a 3-5 Quart pot, saute ground turkey in olive oil until golden brown. Add yellow onions, garlic, tomatoes, and simmer on medium heat for 15 mins. Remember, the beauty of this recipe is to add as many vegetables as you like to make this like a hearty
- stew, chili style. I have used broccoli, mushrooms, and many other ingredients I happened to have int he refrigerator or freezer. There is no wrong way to cook this recipe; spinach makes any soup recipe creamier.
- Toppings: My favorites are low-fat sour cream, Mexican low-fat cheese or low-fat Swiss, green onions, diced tomato, flaxseed chips from Trader Joe's, and Tomatillo hot sauce
