Lemon Surprise Pudding

Tips: This much-loved dessert is cheap and easy to make, and is perfect for all the family on a cold day. The surprise is the unexpected, rich, tangy sauce that is concealed beneath the delectable light sponge. Lemons are often waxed, so you should either buy unwaxed lemons or scrub the peel thoroughly under hot water to remove the wax before grating.

INGREDIENTS:
1/4 cup butter, plus extra for greasing
grated rind and juice of 2 lemons
2 eggs, separated
1 1/4 cups milk
1/2 cup caster (superfine) sugar
1/2 cup self-raising flour
DIRECTIONS:
  1. Preheat the oven to 375`F. Use a little butter to grease a 5 cup baking dish.

  2. Beat the lemon rind, remaining butter and caster sugar in a bowl until pale and fluffy. Add the egg yolks and flour and beat together well. Gradually whisk in the lemon juice and milk (the mixture will curdle, but this is supposed to happen).

  3. Fold the egg whites lightly into the lemon mixture using a metal spoon, then pour into the prepared baking dish.

  4. Place the dish in a roasting pan and pour in hot water to come halfway up the side of the dish. Bake for 45 minutes until golden. Serve immediately.
