Cheesy Ham Bake Casserole |

INGREDIENTS: |

celery stalks |

scallions |

low-fat soft cheese with garlic and herbs |

low-fat unsweetened yogurt |

4 tbsp |
Parmesan cheese, freshly grated |

celery salt and pepper |

tomato salad, to serve |

crusty bread, to serve |

DIRECTIONS: |
- Wash the celery, remove the leaves, and slice the stalks into 3 equal portions.
- Cut any visible fat off the ham and lay the slices on a chopping board. Place a piece of celery on each piece of ham and roll up. Place 3 ham and celery rolls in each of 4 small, heatproof dishes.
- Trim the scallions, then finely shred both the white and green parts. Sprinkle the shredded scallions over the ham and celery rolls and season with celery salt and pepper.
- Mix together the soft cheese and yogurt and spoon over the ham and celery rolls.
- Preheat the broiler. Sprinkle each portion with 1 tbsp grated Parmesan cheese and broil for 6-7 minutes until hot and the cheese has formed a crust. If the cheese starts to brown too quickly, lower the broiler setting lightly.
- Serve with a tomato salad and lots of fresh crusty bread.
