Spaghetti with Meat Sauce and Goat Cheese |

ground beef chuck |

tomato paste |

beefsteak or plum tomatoes, chopped |

chopped fresh basil |

goat cheese |

DIRECTIONS:
- Cook the pasta according to the package directions; drain and return it to the pot.
- Meanwhile, heat the oil in a large skillet over medium-high heat. Add the onion, garlic, and 1/2 tsp each salt and pepper. Cook, stirring occasionally, until the onion begins to soften, 3-5 minutes.
- Add the beef to the skillet and cook, breaking it up with a spoon, until browned, 3-5 minutes. Add the tomato paste and cook, stirring, for 30 seconds.
- Add the tomatoes, 1/2 tsp salt, and 1/4 tsp pepper and cook, stirring occasionally, until beginning to soften, 5-7 minutes more (add up to 1/4 cup water if the pan is dry)/
- Add the beef mixture, goat cheese, and basil to the pasta and toss to combine.
