Baked Tuna Croquettes |

INGREDIENTS: |
12 oz can |
tuna, packed in water, drained |

1 cup |
leftover rice (brown or white) |

egg, beaten |
|
2 tbsp plus 6 tsp |
light (reduced-calorie) mayonnaise |

1/4 tsp |
black pepper |
|
1 tsp |
dried onion flakes |
|
|
nonstick cooking spray |
|
6 tsp |
dill pickle relish |
|

DIRECTIONS:
- Preheat oven to 400`F. In a small mixing bowl, combine tuna with rice, egg, 2 tbsp mayonnaise, black pepper, and onion flakes.
- Spray 6 cups of a muffin tin with nonstick cooking spray. Spoon about half a cup of the mixture into each muffin mold, then press firmly on each to help the croquette keep its shape.
- Bake for approximately 22-25 minutes. Quickly remove croquettes from muffin tin with a spatula.
- Top each with 1 tsp light mayonnaise then 1 tsp dill pickle relish for a garnish.
