unsweetened whole-grain cereal flakes, crushed |

boneless, skinless chicken breasts, cut into 3/4in pieces |

dipping sauce, for serving |

DIRECTIONS:
- Heat oven to 425`F. Line 2 rimmed baking sheets with parchment paper.
- In a medium bowl, combine the buttermilk, 1/2 tsp salt and 1/4 tsp pepper. Place the crushed cereal in a shallow bowl.
- Dip the chicken in the buttermilk, letting excess drip off, then coat in the cereal and place on the prepared baking sheets. Bake until the chicken is golden brown and cooked through, 10-12 minutes.
- Serve with the dipping sauce.
