bay leaf |

olive oil |

diced tomatoes |

frozen cut okra |

frozen corn |

cayenne pepper |

salt and pepper, to taste |

shredded rotisserie chicken |

rice, cooked |

DIRECTIONS:
- Cook onion, garlic, and bay leaf in olive oil in a skillet over medium heat until softened, 8-10 minutes.
- Add can of diced tomatoes, frozen cut okra, frozen corn, and cayenne; season with salt and pepper. Cook until tender, 6-7 minutes.
- Stir in rotisserie chicken and serve over cooked rice.
