Pasta with Goat Cheese and Basil Oil |

gemelli or some other short pasta |

fresh basil leaves, divided |

1/2 cup |
olive oil |

4 oz |
fresh goat cheese, crumbled |

1/2 tsp |
kosher salt |

1/4 tsp |
black pepper |

DIRECTIONS:
- Cook gemelli or some other short pasta according to the package directions; drain and return it to the pot.
- Meanwhile, in a blender, puree 2 cups fresh basil leaves with olive oil until smooth; pour through a fine-mesh sieve and discard the solids.
- Toss the pasta with the basil oil, goat cheese, 1 cup fresh basil leaves, kosher salt, and black pepper.
