Flaky Chicken & Veggie Pot Pie

INGREDIENTS:
1 frozen pie crust (Marie Callanders) substitution: or Pie Crust sheets (use 1 sheet)
1 cup chopped broccoli, califlower, carrots
1 tbsp corn starch
1 tbsp olive oil
1/2 tsp kosher salt
1/2 tsp white pepper
1 cup frozen baby peas
3/4 cup chopped baby zucchini
DIRECTIONS:
  1. Heat oven to 375`F. Cook bottom crust until light brown and add chicken mixture. Top with second pie crust and prick dough with a fork.

  2. Chicken Mixture:

  3. In skillet, saute' onion. Add chicken broth and then Add all remaining ingredients and simmer until veggies are tender and mixture cooks down.

  4. add chopped rotisserie chicken last and simmer 5 more minutes . Add chicken mixture to pie crust and bake until golden brown and cooked through, 20-25 minutes.

  5. Rest pie for 10 minutes and serve.
