Skewered Broiled Chicken Kabobs |
Tips: Serve them with a crisp leaf salad or add hummus and chicken to pita bread for a nutritious sandwich. |

INGREDIENTS: |
1 |
finely grated rind and juice of lemon |
|
2 |
garlic cloves, finely chopped |
|
2 tsp |
chopped jalapeno chiles |
|
8 |
boneless chicken thighs, skinned and each cut into 3 or 4 pieces |
|
|
lemon wedges, to serve |
|
4 tbsp |
olive oil |
|
|
salt and ground black pepper, to taste |

DIRECTIONS:
- In a shallow dish, combine the oil, lemon rind and juice, garlic, jalapenos and seasoning. Add the chicken pieces and turn to coat thoroughly in the marinade. Cover and place in the refrigerator for at least 4-6 hours
- When ready to cook, thread chicken on oiled skewers and cook under a pre-heated (broiler) for 6-8 minutes, turning frequently. Serve with lemon wedges.
- Optional: Garnish with flat leaf parsley leaves
