Rotisserie Chicken & Polenta Bruschetta |
Tips: This quick & easy dish can be a main dish recipe or appetizer. Add italian turkey sausage meat cooked and added to casserole. |

INGREDIENTS: |
1 Tube |
(one pound) polenta, cut into 1/2 inch slices |

1 Tbl |
olive oil |
|
4 Tbl |
shredded Parmesan Reggiano cheese |
substitution: add other cheese if you prefer- goat-blue cheese etc. |
1 1/2 Cup |
bruschetta topping (see below) |
substitution: use whatever veggie's you like, eggplant or zucchini |
3/4 Cup |
rotisserie chicken finely chopped |

DIRECTIONS:
- In large non-stick skillet, brush olive oil on pan, add polenta slices and cook on medium heat until golden brown both sides. In bowl, mix bruschetta topping
- topping: 1 cup of diced tomatoes, 1 cup of red & yellow peppers, 1 teasp. of garlic powder (fresh may be substitued) , 1 tbl. of italian seasoning,
- and salt & pepper to taste. Take polenta out of skillet , add bruschetta mixture and saute' until golden brown.
- Place polenta in bottom of glass baking dish, add brushetta topping mixture, rotisserie chicken, add shredded parmesan chesse and broil for 5 minutes or until brown on top.
- This recipe is a favorite for guests, or as a side dish for your family meals.
