Tomato Gazpacho Soup

Tips: This refreshing soup is a big hit in the heat of the summer. You can add your favorite veggies to this soup. Quick, simple and pocket friendly.

INGREDIENTS:
8 roma tomatoes - diced
1 large hot house cucumber- seeded and diced
1 red pepper - seeded and diced
1 chopped garlic clove substitution: 1 tablespoon of jar garlic
1 green pepper - seeded and diced
1 mediumn sweet onion diced
1 Qt. V-8 juice low salt substitution: tomato juice may be substituted
1 tbl tabasco ( Optional) depending on your level of heat desired
1 tbl salt
white pepper to taste
1 tbl sugar
2 stalks of celery diced
DIRECTIONS:
  1. In food processor, add red pepper, green pepper, garlic, onion, and cucumber. Pulse speed until mixed. Add remaining ingredients and blend thoroughly.

  2. refrigerate for 1 hour, serve in iced bowls ( rinse soup bowls under water and freeze and serve)

  3. garnish with chopped scallions & celery leaves
