roma tomatoes - diced |

large hot house cucumber- seeded and diced |
|

red pepper - seeded and diced |
|

chopped garlic clove |
substitution: 1 tablespoon of jar garlic |

green pepper - seeded and diced |

mediumn sweet onion diced |

V-8 juice low salt |
substitution: tomato juice may be substituted |
1 tbl |
tabasco ( Optional) depending on your level of heat desired |

white pepper to taste |

stalks of celery diced |

DIRECTIONS:
- In food processor, add red pepper, green pepper, garlic, onion, and cucumber. Pulse speed until mixed. Add remaining ingredients and blend thoroughly.
- refrigerate for 1 hour, serve in iced bowls ( rinse soup bowls under water and freeze and serve)
- garnish with chopped scallions & celery leaves
