Tofu Cutlets |

INGREDIENTS: |

onion, finely chopped |

garlic clove, crushed |

1 3/4 cups |
unsalted peanuts |

small bunch of fresh coriander |

firm tofu, drained and crumbled |

1/2 cup |
brown rice |
|
1 tbsp |
vegetable oil |

2 tbsp |
soy sauce |
|

DIRECTIONS:
- Cook rice according to instructions on the package, then drain. Heat vegetable oil in frying pan and cook onion and garlic over low heat, stirring occasionally, for about 5 minutes, until golden brown.
- Spread peanuts ona baking sheet and broil , until browned.
- In blender or food processor add peanuts, onion, garlic, rice, tofu, coriander, add soy sauce and process until the mixture has consistancy of thick paste.
- Divide the paste into eight equal-size cutlet patties.
- Heat the olive oil for shallow frying in a large frying pan. Add the cutlets and cook for 5-10 minutes on each side, until golden brown.
- Remove from the pan and place on paper towels to drain. Keep warm while you cook the remaining batch, then serve on a grilled bun or sauteed vegetables.
