Apple and Cinnamon Muffins |

small eating apples, peeled, cored and finely chopped |

caster (superfine) sugar |

1 1/4 cups |
plain (all-purpose) flour |

baking powder |

DIRECTIONS:
- Preheat the oven to 400`F. Line a large muffin tin (pan) with six paper cases.
- Put the egg, sugar, milk and melted butter in a large bowl, and beat with a spoon until thoroughly combined.
- Sift in the flour, baking powder, salt and 1/4 tsp ground cinnamon. Add the chopped apples and mix roughly. Spoon the mixture into the prepared muffin cases.
- To make the topping, mix the crushed cubes with the remaining cinnamon. Sprinkle over the uncooked muffins.
- Put the muffins in the center of the preheated oven. Bake for 30-35 minutes until well risen and golden brown on top. Transfer the muffins to a wire rack to cool. Serve them warm or at room temperature.
