Beef & Orange Curry |

INGREDIENTS: |

sirloin beef, trimmed and cut into 3/4 in cubes |

curry paste |

beef stock |

DIRECTIONS:
- Heat the oil in a large saucepan. On medium heat, fry the shallots, garlic, and cubes of beef for 5 minutes, until beef is browned.
- Blend together the curry paste and beef stock. Add mixture to beef and stir until blended. Bring to a boil, cover, and simmer for 1 hour. Check to see if meat is tender.
- Grate the rind of 1 orange and Add Juice of 1 orange. Peel the two remaining oranges. Slice and use the flesh of orange only.
- Blend the cornstarch with the orange juice. Stir the orange rind into the cooked beef mixture and add the orange and cornstarch mixture.
- Bring to boil and then simmer for 3-4 minutes, stiring occastionally, until sauce thickens. Add orange segments.
- Sauce: Raita - mix the cucumber with mint, stir in the yogurt. Season with salt & pepper to taste.
- Serve with Balsmati Rice and Cucumber Raita.
