Beef & Orange Curry

INGREDIENTS:
1 tbsp vegetable or canola oil
8 oz shallots chopped
2 garlic cloves, crushed
1 lb sirloin beef, trimmed and cut into 3/4 in cubes
3 tbsp curry paste
2 cups beef stock
4 medium oranges
2 tsp cornstarch
DIRECTIONS:
  1. Heat the oil in a large saucepan. On medium heat, fry the shallots, garlic, and cubes of beef for 5 minutes, until beef is browned.

  2. Blend together the curry paste and beef stock. Add mixture to beef and stir until blended. Bring to a boil, cover, and simmer for 1 hour. Check to see if meat is tender.

  3. Grate the rind of 1 orange and Add Juice of 1 orange. Peel the two remaining oranges. Slice and use the flesh of orange only.

  4. Blend the cornstarch with the orange juice. Stir the orange rind into the cooked beef mixture and add the orange and cornstarch mixture.

  5. Bring to boil and then simmer for 3-4 minutes, stiring occastionally, until sauce thickens. Add orange segments.

  6. Sauce: Raita - mix the cucumber with mint, stir in the yogurt. Season with salt & pepper to taste.

  7. Serve with Balsmati Rice and Cucumber Raita.
