Potato Layer Bake

Tips: Potatoes make a very good basis for a vegetable accompaniment. They are a good source of complex carbohydrate and contain a number of vitamins. From the point of view of flavor, they combine well with a vast range of other ingredients.

INGREDIENTS:
1 lb 2 oz potatoes
1 leek, sliced
3 garlic cloves, crushed
1 3/4 oz Cheddar cheese, grated
1 3/4 oz mozzarella cheese, grated
1 oz Parmesan cheese, freshly grated
2 tbsp chopped fresh flat leaf parsley, plus a few extra sprigs to garnish
salt and pepper
2/3 cup light cream
2/3 cup milk
DIRECTIONS:
  1. Preheat the oven to 325`F. Cook the potatoes in a pan of boiling salted water for 10 minutes. Drain well.

  2. Cut the potatoes into thin slices. Arrange a layer of potatoes in the bottom of an ovenproof dish. Layer with a little of the sliced leek, crushed garlic, cheese, and chopped parsley. Season to taste with salt and pepper.

  3. Repeat the layers until all the ingredients have been used, finishing with a layer of cheese.

  4. Mix the cream and milk together, season to taste with salt and pepper, and pour over the potato layers.

  5. Cook the bake in the preheated oven for 1 - 1 1/4 hours, or until the cheese topping is golden brown and bubbling and the potatoes are cooked through and tender.

  6. Garnish the bake with chopped parsley and serve immediately.
