Grilled Portobello Quesadillas

INGREDIENTS:
4 medium portobello mushrooms
2 tbsp olive oil, divided
1/2 tsp kosher salt
1/4 tsp black pepper
8 8in flour tortillas
2 cups pepper jack, grated
DIRECTIONS:
  1. Heat grill to medium. Brush portobello mushrooms with 1 tbsp olive oil and season with kosher salt and black pepper. Grill, covered, until tender, 8-10 minutes minutes per side; thinly slice.

  2. Lightly brush 1 side of each tortilla with 1 tbsp olive oil. Form 4 sandwiches with the tortillas (oiled sides facing out), mushrooms, and pepper jack.

  3. Grill, covered, until the cheese is melted and the tortillas are crisp, 1-3 minutes per side.
