Apricot-Glazed Pork Chops

INGREDIENTS:
2 tsp olive oil
4 bone-in pork chops (1in thick, about 2 1/2 lbs total)
1/2 tsp kosher salt
1/2 tsp black pepper
1/2 cup apricot preserves
1 tbsp balsamic vinegar
DIRECTIONS:
  1. Heat olive oil in a large skillet over medium-high heat. Season pork chops with kosher salt and black pepper and cook until browned and cooked through, 6-8 minutes per side.

  2. Add apricot preserves and balsamic vinegar to the skillet and cook, turning the pork once, until the apricot mixture coats the pork, 1-2 minutes more.
