Crab and Tofu Stir-fry |

INGREDIENTS: |

silken tofu |
substitution: watch dates on tofu |

garlic cloves, finely chopped |

canned crab meat |
|
3 3/4 oz |
baby corn cut in half |

scallions chopped |
|
1 |
fresh red chilli or jalapeno pepper seeded and chopped |
|
1 |
lime (juice of lime) |

1 tbl |
coriander spice |

DIRECTIONS:
- Drain the silken tofu. Using a sharp knife, cut the tofu into 1/2 inch cubes.
- Heat the oil in a wok or heavy frying pan. Add the tofu cubes and stir-fry until golden. Remove the tofu and set aside in bowl.
- Add garlic to wok or pan and stir-fry for about 1 minute until golden brown. Add crab meat, tofu, corn, scallions, chilli, soy sauce, fish sauce and sugar. Cook, stirring vegetables until tender.
- Add lime juice, coriander and serve with lime wedges. Optional: Japanese egg noodles or rice.
