Winter Chicken Casserole |
Tips: This is a very simple and economical
dish to prepare and cook. |

INGREDIENTS: |

4 lb.chicken cut in pieces |

3 |
shallots, finely chopped |
|
2 |
sliced carrots |
|
2 |
celery sticks, chopped |
|
2 |
garlic cloves, chopped |
|
1 |
juice of lemon |
|
1 1/4 cups |
hot water |
|
2 tbsp |
chopped flat leaf parsley |
|
|
DIRECTIONS:
- Preheat the oven to 350`F. Heat the olive oil in casserole and brown the chicken pieces on both sides. Take chicken out of casserole and set aside.
- Add to casserole- shallots, carrots, celery and saute them until soft.
- Add garlic and cook until soft, return the chicken to the pan and pour the lemon juice over the mixture. Simmer for 2-4 minutes, add water and season with salt and pepper.
- Cover the casserole and bake for 1 hour, turning the chicken pieces over occasionally.
- Remove the casserole from the oven .
- cook egg noodles per package instructions - drain and plate
- Add chicken to noodles and garnish with flat leaf parsley
