Turkey Bacon Veggie & Cheese Quiche |
Tips: Great for those leftovers in your refrigerator that you don't know what to make. Try adding turkey sausage instead of turkey bacon. Yummy!! |

INGREDIENTS: |

large bag of frozen chopped spinach |

large onion chopped (approx. 1 cup) optional |
|
2 |
medium tomatoes sliced |
|
1 |
16 oz. of low-fat shredded mexican cheese (sargento brand is a good quality) |
|
2 cups |
low-fat milk |
substitution: may add other cheeses desired |
1 |
small lot goat cheese |
|
8 |
large eggs |
|
3 cups |
bisquick |
|
|
salt & pepper to taste (approx 1 teasp each) |
|
2 tbl |
pure vegetable oil |
|
|
Optional: fresh basil leaves to add to the top of quiche |
|
1 teasp. |
dried italian seasoning |

DIRECTIONS:
- Heat oven to 375 degrees. Add cooking spray to deep rectangle casserole dish. Chop onions, slice tomatoes and defrost frozen spinach - drain water from spinach and set aside.
- In blender or food processor, add milk, bisquick, eggs, oil, salt & pepper and pulse to start, then blend until mixture is smooth. The consistancy is thicker, like pancake mix.
- In casserole dish, add onions, spinach, cheese, and then pour baking mixture over the spinach. Top with goat cheese, basil and tomatoes to casserole dish Top with basil and bake
- 45 minutes on 375 degress or until toothpick inserted in center comes out clean. Cool 5-10 minutes and serve.
